ABSTRACTMathematical analysis of convection drying in the falling rate period was used to determine the overall coefficient of diffusion as a function of temperature and moisture content. The mass diffusion equation and its series solution was adopted for a single wheat kernel, assuming that it can be represented by a sphere as a model system. The results of the experimental data and the calculations are presented in the graphical form. |
