Proximate and mineral analyses were made of the Guerrero variety of teosinte (Euchlaena mexicana). It was found that the moisture content decreased with finer grinding prior to analysis and that this variation affected the amount of protein reported to be present in the whole grain. Compared to hulled and milled teosinte (endosperm) analyzed by others, whole teosinte had approximately 3 times the mineral content and had a lower metabolizable energy due to the large amount of fiber present in the outer coating of the grain. When metabolizable energy was calculated, using specific energy factors for the nutrients determined by proximate analysis, the value obtained was only three‐fourths of the amount calculated solely from the gross energy value determined by calorimetry. The appropriateness of such analyses for nutritional evaluation is discussed. |
